Southern Style Crepes


Crepes topped with fruits and a scoop of ice cream make a delightful dessert!

Crepes are a very thin, pan-cooked item. This recipe is made from very common ingredients and therefore most people will have the ingredients stowed away in their pantry or cupboard already. These crepes are traditionally a breakfast item for my family and I, where we would eat them like pancakes or stuff them with fruit for a delicious meal, although they can also be treated as a dessert item. This recipe is significant to me because it was a special breakfast that would be served. It was not often that crepes were cooked, but when they were, there was almost a tangible sense of excitement among the family members. This meal was cooked by my mother as I grew up, and eventually

my younger sister began preparing it for the family. Now that I am living away from them however, I will have to step up and use the recipe to treat myself. This recipe is one that is simple to prepare but pays off very well. The taste of warm fresh crepes is almost like starting the day off with dessert. With the multiple ways to top this delicious breakfast from syrup to a cream cheese topping to fruits like strawberries or blueberries, there is always a way to vary the recipe and make it a new experience.

 

Well, its about time to cook now isn't it. You will need the following:


  • 1 & 1/2 cups all purpose flour

  • 1 tablespoon sugar

  • 1/2 teaspoon baking poweder

  • 1/2 teaspoon salt

  • 2 cups milk

  • 2 tablespoons melted margarine or butter

  • 1/2 teaspoon of vanilla

  • 2 eggs

Begin by combining the dry ingredients into a bowl. Once they are mixed well, add in the wet ingredients and beat the batter until smooth. Butter or oil a 6 to 8 in. skillet and heat over medium heat.


Once the butter is bubbly, pour 1/4 cup batter into the skillet and immediately rotate the skillet until the batter forms a thin layer covering the bottom of the pan. Cook until light brown, then flip and cook the other side until it is light brown as well. As you finish cooking a crepe, stack them with wax paper between to prevent sticking.


To serve, fill crepes with desired filling and roll them up. Add a thin layer of powdered sugar if desired. ENJOY!
